Pizza Armando
This recipe was kindly given to me by Giuseppe Castagna.
Ingredients for four or five pizzas
- Base
 
  
  - 18 gr. natural east
 
  - 15 gr. salt
 
  - 300 ml. lukewarm water
 
  - 300 gr. ¨00¨ flour
 
  - 215 gr. ¨0¨ flour
 
  - Extra-virgin olive oil
 
  
- Topping
 
  
  - A can of whole peeled tomatoes
 
  - Salt
 
  - Extra-virgin olive oil
 
  - Mozzarella
 
  - Black olives, capers,... (facultative)
 
Preparation
Dissolve the east in the water. Mix with the four and salt kneed till
it becomes a unique compact mass. Let it rest for 2 hours. Grease the
pans with the olive oil. Make disks of pasta and transfer them to the pans. Add tomatoes with a bit of salt
(if needed) and the olive oil. Cook in the oven. on high, fro about 15
minutes. A few minutes before the end add the mozzarella and the other
ingredients, if any.
